The Garcia family and their neighbors are hyperaware of the challenges posed by climate change and have committed to preserving the ecosystem that sustains them. They maintain portions of their land as untouched forest and strictly protect the native vegetation surrounding the waterways where their local water originates. Their farming model is one of deep integration; coffee is intercropped with fruit trees like avocado and lemon, which provide essential shade. This ecosystem is further supported by free-range animals, including chickens, pigs, and guinea pigs, whose manure serves as natural fertilizer for the land.

The production of this lot involves the Castilla and Colombia varieties, supplemented by banana crops. Following a careful and selective harvest, the coffee is processed in cement tanks where it undergoes fermentation for 15 to 17 hours. The drying process is completed on patios or raised beds over a period of 8 to 12 days, ensuring the coffee reaches a stable and high-quality state.
